Coffee Chocolate Nutella Cake

Anyone who knows me can tell you that my favorite place in all of Italy – and perhaps in the whole world -- is Bologna. I know, I know – I live in Rome. Isn’t that better than Bologna? The truth is that though Rome is an amazing city, Bologna will always have a special place in my heart. In addition to the amazing people I met there, there are also the places that characterize the city, and are part of the many wonderful memories I have of my time living there. Piazza Maggiore and the Neptune Fountain, the Torri Asinelli, Via Zamboni, the Giardini Margherita, and San Luca are just a couple of these. And of course, the Nutelleria. 

Yes, you understood correctly -- in Bologna there is a Nutelleria, or rather a tiny cafe' just off the main street of the city where everything offered on the menu is designed to highlight Nutella, the beloved chocolate hazelnut spread that is found everywhere in Italy and is highly underappreciated in America, where peanut butter reigns supreme. I had heard of it but never tried it before my time in Bologna -- thankfully, the Nutelleria helped me make up for my lost time with Nutella. The menu boasts such items as nutella crepes, nutella milkshakes, croissants stuffed with nutella, nutella cornflake candies, and even nutella pizza. 
The cake I’m sharing with you for this post would have most certainly fit in at the Nutelleria in Bologna. The cake itself is a fluffy American style chocolate cake, with hints of coffee that offset the richness of the abundant amount of nutella swirled on top. It is good for breakfast, snack, or a quick dessert (or at any time of the day really.) You could also make this cake using a cupcake pan, and have little coffee chocolate nutella muffins. Yummy. 



2/3 cup whole milk
5 tbsp butter, melted and cooled
3.5 tbsp instant coffee granules
1 1/2 tsp vanilla extract
1 egg
1 and 2/3 cups all-purpose flour
1/3 cocoa powder

2/3 cup sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup nutella (or more to taste)


Preheat oven to 350 degrees Fahrenheit.

Whisk together the milk, butter, coffee granules, vanilla and egg in a medium bowl.

In a large bowl, mix together the flour, sugar, baking powder and salt. Slowly pour the milk mixture into the flour mixture. Stir until combined all of the ingredients are well combined. The batter will be thick.

Pour the batter in to a nine inch square pan; top the batter with spoonfuls of nutella and swirl it around with a knife to get a nice marbled effect. 

Bake the cake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Serves about 8 people.
